For instance, our Mexico Chiapas has distinct floral aromas, while our Bolivia Caranavi
has an unmistakable nutty flavor. Climate, topography, geography, and soil compose
the terroir that makes each coffee origin different and special.
Every coffee can be roasted to a different level, or profile, that brings out certain flavors
and aromas. We choose the roast profile that enhances each coffee’s most desireable
characteristics.
Full-City, our lightest roast, generally has bright floral and fruity notes and less body (a
term describing the “feel” of a coffee as you taste it). A dark French Roast exhibits lots
of body and a bittersweet roasty flavor. The Vienna roast, between medium and dark,
balances the individual character of the coffee with a rich, full yet smooth, body.
To us, roasting delicate, citrusy Papua New Guinea coffee beans past the Vienna level
is like a chef cooking sushi-grade tuna all the way to well-done. On the other hand,
bold Sumatra Gayo Mountain beans can be too grassy-tasting unless pushed to a
French Roast.
